Hi from Takayama

I'm Sanae. I have lived in Takayama for 4 and a half years starting Oct. 2014 till March 2019. I enjoyed living in such a beautiful city surrounded by mountains. Here is a blog that shares the happy times I had in Takayama.

My new place is Anjo, Aichi, but I'm too much in love with Takayama, I will continue adding some more infos about Takayama, plus I will be adding some updates about my new place as well.

Also, my life has been about "moving" everywhere!! Believe it or not, this was my 14th time to move and I thought there are a lot to share about my "moving life." There are some special things that I see and experience by living in different cities not just in Japan but in other countries as well!!

Cheers to new findings!!

Have you seen a cedar ball
hanging under the eaves of Japanese houses?
These are the signs of sake breweries!

When sake is freshly brewed
a new cedar ball would appear at the entrance of a brewery.
By looking at the color of a hanging cedar ball
you are able to tell how mature the sake has become.

Yesterday, there was a ceremony to celebrate the new sake
and putting up of a new cedar ball at Funasaka Brewery in Takayama.
New sake was served to the customers in a tiny wooden "masu."

Yay, new sake season has begun!!

2016③ autumn colors 2016③

While we did our autumn walk,
my son bought me a cup of sake at one of my favorite brewery, yay!!
(I chose "daiginjo" the highest rank sake, ha-ha)
Kids had their cups of amazake (a sweet drink made from fermented rice).

I bought them yakitori (grilled chicken on a skewer) in return at
Shiroyama Park and enjoyed our 20,000 steps walk up and down the town.

Doesn't Lord Kanamori, the feudal lord who found Takayama,
look handsome in his beautiful autumn setting?

ある日クッキングスタジオにて one day at the cooking studio

At the cooking studio where I work,
we always discuss about the new menus,
about the seasonal vegetables,
about the popular local recipes,
and so on and so on.

What's common about the topics?
They're always about food and drinks.

When there are no lessons,
we sometimes buy several seasonal vegetables from the market
and try some new recipes!!

We never forget to try several sake and check
what menues go well with the local sake selections.

Gee, aren't we such hard workers??? ha-ha.

And, anyone's welcome to walk in!!
When you find the staffs tying some recipes and sake,
feel free to step inside the kitchen.
Why not have some chat over a few sake and some local food!!

後四日 four more days

Four more days and the official sake brewery tour of
the backyards are ending.

Last year, we only had the chance to attend two of the six breweries.
This year, we were fortunate that we were able to visit five!!

We were explained that, since all six breweries are located close by
using the same underground water,
rather than making sake having similar features,
they are working hard to produce sake with
UNIQUE and DIFFERENT flavor and taste.

It is very interesting to listen to stories of each breweries.
Some still produce sake in an unchanged style from the old days,
some are using new utensils and machines to be more productive.

Also, it is wonderful that we are able to taste the freshly brewed sake!!

Please, even if you are not a sake lover,
don't forget to challenge sampling some sake in Takayama.

It is just so amazing to actually taste and experience that
each and every sake has its unique flavor and taste.
And they're not just different, each and every one of them
has been produced with the greatest care and effort
by the brewing master and they are definitely worth trying!!

おり酒 orizake (sake with sediment)

Last night we tried orizake,
a sake with some sediment, for the first time in our life.

Among the six sake breweries that are located in the
old town area of Takayama,
there are two breweries that use an old style pressing equipment.

This orizake is a product that can only be made at these breweries with
an old equipment.

When fermentation is done,
sake needs to be pressed and filtered using a pressing equipment
to separate the liquid and the lees.

Using the old style equipment,
certain amount of sediment remains even after filtering.

This orizake (sake with sediment) has its distinct
flavor and texture that there are many fans
who awaits for orizake to be sold every year when new sake is brewed.

Only a limited amount of orizake can be collected in each tank
after the sediment settles at the bottom.

To be honest, we bought this orizake just because we wanted to try it.
We are not a big lover of nigorizake (a cloudy, unfiltered sake) so
we weren't even sure if we will be able to finish it.
But to our surprise, we actually liked it a lot!!

It's going to be something we will enjoy as a seasonal sake
from now on!!

Hirata brewery

This is our second year in Takayama
and for the second time,
we are enjoying the Sake-Brewery-Tour-Period.
(sake brewery tour 2015)

All six sake breweries located in the old town area
are open throughout the year,
but starting from the middle of January till March,
each brewery opens their back side to the public
and there are even free guides who
explain the history and the features of each brewery.

Last week,
we went to Hirata Brewery which has a history of about 120 years.

Hirata Brewery is a family run brewery that
cares about quality rather than quantity.

Two years ago, an aged sake called "Suiou" won a trophy award and a gold medal
in the IWC(International Wine Challenge).
This particular aged sake has a rich and complex flavor
very different from that of typical sake that are commonly consumed within a year
once it's brewed.

Since the rice that was used for brewing this award winning Suiou is no longer being grown,
the sake cannot be purchased once the tank empties.
Hurry!! if you want to try some!!

IWC(インターナショナルワインチャレンジ)で

Junmai Sake

There are a lot to explain about
when talking about sake.

The sake we had tonight is
the "Junmai-ginjyo-shu (sake)" which is made purely from rice.
That means no alcohol has been added
and they've polished the rice to at least 60 percent of the whole grain.

I perhaps have to go on explain about the polishing of the rice
but I'll do that on my other post.

The pure rice sake (junmai-shu) tend to have a sweet and mild taste
and this one from Funasaka brewery is one of those.

We used both the "masu (the wooden cup)"
and the "ochoko (the tiny ceramic cup) to drink the sake.

Usually, the ochoko is used when the sake is warmed
but who cares, we enjoyed sipping and pouring the sake to each other!!

Actually we bought these ochokos at the antique shop in the old town.
It was great fun to choose a couple from the whole bunch!!

AND it was a lot of fun to actually drink the delicious sake using
these beautiful utensils!!
